The 'Patty Pan' Squash - Cucurbita pepo var. ovifera - is an original squash from the Cucurbitaceae family. This ancient vegetable stands out from other squashes thanks to its unique, star-shaped and bulging form. It comes in several colours: white, yellow, orange, variegated white with green or orange, with smooth or warty skin. Once picked, it can be stored for a long time, just like pumpkin. The 'Patty Pan' Squash is appreciated for its white, fine and melting flesh, reminiscent of the flavour of artichoke, and lends itself to numerous recipes. Cooking 'Patty Pan' squash is child's play! Depending on its ripeness, it can be consumed like a courgette: baked or grilled, steamed, marinated, fried, or even stuffed. As a non-running variety, the white 'Patty Pan' Squash can be grown in a small vegetable garden and even in a pot on a terrace or balcony.
