The Sweet Potato – Ipomoea batatas– from the Convolvulaceae family, is a vegetable plant cultivated for its tuber, even though its flower – an Ipomoea – gives the garden a touch of exoticism. In the kitchen, the Sweet Potato lends itself to the same culinary variations as the Potato, with which it is often compared. Its sweet flesh is highlighted when fried, sautéed, roasted, etc. But it is in desserts that it reveals itself to be the most surprising: crumbles, cakes, or tarte Tatin. The Sweet Potato is rich in beta-carotene, vitamin B6, copper, and manganese. In the vegetable garden, it thrives in loose, slightly sandy, well-drained soil.
