Description

Carum petroselinum, or parsley, is a well-known culinary herb.

This vigorous and biennial plant bears light green foliage. The leaves are divided and curled, and the flowers are greenish in colour. It adds decoration to salads and meat and fish dishes, and flavours soups, stews, and sauces. Parsley is rich in vitamin A, B, and C, as well as calcium, magnesium, sodium, and essential fatty acids. It is recommended by the National Institute of Agricultural Botany.

Sow flat parsley seeds from February to August-September in well-drained, fertile, and slightly humus-bearing soil. They take time to germinate. At the time of harvest, it will reach 70cm tall (12 to 14 weeks after planting).

Planting and care

The seeds can be sown in good compost in 7cm (3in) pots in a greenhouse or cold frame from February until August-September. Sow either broadcast or preferably in rows spaced 25 to 30cm (10 to 12in) apart. The soil should be fertile, light, and somewhat humus-bearing. Cover with a very thin layer of fine compost. Transplant the young plants to the garden in May, spaced 15cm (6in) apart. You can also sow directly in the ground or in pots from March to July, in partial shade. You can start harvesting 12 to 14 weeks after planting.
