Gherkin – Cucumis sativus – is a cousin of Cucumber. This annual herbaceous plant produces fruits that are harvested when immature, to be preserved in vinegar and used as a condiment. Gherkin seeds are sown in April-May, the plants are installed in the vegetable garden after the last frost, in warm soil. 'Green' 'Petit de Paris', 'Bourbonne', 'Meaux Fin' or 'Russian'… all these varieties are from Organic Farming and obtained without insecticides or chemical fertilizers.
