The Leek – Allium porrum – of the Liliaceae family is a biennial herbaceous plant widely cultivated in the vegetable garden for its sheathing leaves or pseudo-stems: the white shaft ends with a bouquet of often bluish-green flat leaves. The white part that remains underground because it is hilled up in winter offers a very fine flavour. Considered a winter vegetable like Bleu de Solaise, it can be harvested all year round, but some varieties like Jaune du Poitou are only harvested in summer. It is cultivated in two stages: sowing and then transplanting once the plant reaches 15 cm (6in). This vegetable is rich in fibre, pro-vitamin A, and B vitamins.
