Asparagus - Asparagus officinalis - from the Asparagaceae family, is part of refined cuisine. After 3 years, shoots emerge from the root system of this vegetable plant (called "crown"): these are the asparagus shoots, which will be harvested using a dedicated tool. Once established Asparagus can be harvested for 10 to 15 years. Its colour is not related to a variety, but rather to the amount of received light. When green like the Lima Green Asparagus, it has undergone normal photosynthesis; if the top of the stem emerges from the ground they will be violet; and in white asparagus only the very tip emerges from the ground because the entire stem has grown underground. Asparagus can be consumed raw or cooked in soups, gratins, or with vinaigrette. This vegetable is particularly sensitive to cold and humidity.
