Chicory is a vegetable plant grown for its leaves and consumed raw in salads. The Wild Chicory resembles dandelion in its shape and flavor. As for the Cultivated Chicory, two main categories are distinguished: Curly Endives and Escaroles. This rather bitter plant is known to be a major component of mesclun salads. In the garden, they thrive in moderately rich soil, preferably moist but well-drained. Watering should be abundant and frequent to harvest beautiful Chicories such as the voluminous 'Golden Helmet' Escarole.
