Celery - Apium graveolens - is a vegetable from the Apiaceae family that comes in three main forms: Celeriac cultivated for its fleshy root with a spicy flavour, Stalk Celery, often just called Celery, with its finely cut stems ideal for cooking to flavour soups or raw for appetizers, and Leaf Celery or Cutting Celery, used as a herb like parsley. All three have their origins in Marsh Parsley or Marsh Celery. It is a perennial plant known for its purifying and antioxidant properties. Celery is harvested in autumn and winter. It is very hardy.
