Spinach – Spinachia oleracea – from the Chenopodiaceae family is cultivated for its dark green and crispy leaves. When well prepared this vegetable proves to be very tasty in many dishes: raw mixed in spring salads, in turnovers, stir-fried or even in various savoury pies. Spinach is not as rich in iron as it was long believed, but it is remarkable for its high content of vitamin B9. There are winter varieties - Giant Winter Spinach - and summer varieties - Matador Spinach. Therefore, to have a year-round harvest, it is good to stagger sowing with two or more varieties.
