The Organic White Vine Peach is a white-fleshed variant of the Sanguine vine peach, possessing its qualities. It is self-fertile, vigorous, productive, and late ripening, making it suitable for cultivation even in northern France. After three years of cultivation, the tree becomes less susceptible to peach leaf curl. Its small, non-fibrous white-fleshed fruits have a unique, sweet and melting flavour, with a high level of sweetness and acidity. They are round, covered with a yellow-orange to pinkish skin that is well colored. They can be enjoyed in compotes, preserves, and fresh. Harvesting takes place when they are fully ripe, usually in September.

The species name "persica" was given to the peach because it was thought to originate from Persia. In reality, all cultivated forms are native to northern China. It appeared in Europe in the 6th century and experienced significant development in the 19th century. Numerous selections aiming to improve the fruit's taste qualities were made. The Organic White Vine Peach was used at the end of vine rows: more susceptible to diseases than the vine itself, it allowed the vine grower to anticipate treatment for their vine as soon as symptoms appeared.

Like many fruit trees, the Organic White Vine Peach appreciates light, rich, and deep soils, but it does not tolerate excessive water or heavy and compact soils. A sunny location sheltered from the wind will help with fruiting. It is a vigorous tree with a spreading habit, indicating a tall trunk with numerous horizontally growing branches, giving it an elegant spread-out silhouette. Its deciduous foliage is a vibrant green and emits a slight almond scent. Its leaves are long, measuring 8 to 15cm (3 to 6in) in length and 3 to 4cm (1 to 2in) in width, with short petioles. Its late, tender pink flowering occurs in April, so it can be grown north of the Loire. The flowers are hermaphroditic and self-fertile. The fruits that result are round with yellow-orange skin. They have a unique, sweet and melting flavour, with a high level of sweetness and acidity. This tree does not require too much maintenance and tolerates pruning well.

Peaches can be enjoyed raw, cooked, sweetened, salted, flambéed, glazed, or deglazed. They pair very well with wine and certain meats, such as duck. They can be found in numerous recipes, especially for jams, compotes, and pastries.
