Peaches are harvested from July to late September, depending on the varieties and regions. The Peach tree is divided into 4 subfamilies: peaches, with white flesh, downy skin, and a free stone. Pavies, with downy skin, yellow flesh that adheres to the stone. Nectarines, with glabrous and smooth skin, white flesh, and free stones. And finally, Brugnons, with smooth skin and yellow flesh that adheres to the stone.
