Description

Organic 'Giant Market Garden' Endive is a variety known for its large head and robustness. Its large crunchy leaves form a full broad rosette with a naturally blanched tight heart. They can be consumed raw, in salads or cooked as a side dish. This large salad plant is appreciated for its sweet, slightly bitter flavour. It is a versatile and generous endive, ideal for fans of rustic and tasty vegetables! Sow from May to August for a harvest 3 months later, from July-August to October-November.

The Endive is a biennial vegetable plant of the Asteraceae family, like all lettuces. It bears the Latin name Cichorium endivia and is also known as Wide-leaved Endive, White Chicory or Escarole. The endive comes from Wild Chicory found in the wild in meadows and along roadsides.

The 'Giant Market Garden' Endive is an old French variety, mentioned as early as 1926 in the Clause Guide: complete practical gardening guide. It is a robust plant, ideal for autumn harvests, as it tolerates early frosts well. In organic farming, it grows best in well-drained soil rich in organic matter, with regular watering to prevent it from becoming too bitter. Endives all have tonic, purifying, and slightly laxative virtues.

Endives have a rosette habit with fairly large, wavy green leaves. The heart is white, slightly edged with yellow. Some varieties need to be temporarily deprived of light to soften the heart and remove any possible bitterness, while others naturally blanch. They are quite hardy, but a little more sensitive to winter harshness than wild endives. Therefore, in particularly cold regions, it is advisable to provide protection such as forcing cloches or tunnels.

Endive leaves are mainly consumed raw in salads, but can also be stewed, braised, gratin, creamed, or cooked in béchamel sauce.

Harvest: Endives are harvested as needed and as they grow.

Storage: they can be kept in the cool for a few days after harvest.

Gardener's tip: regular hoeing and weeding are recommended, and mulching is advised in case of drought.

Planting and care

Sowing Organic Giant Market Garden escarole:

From May to August.

Sow the seed in a flat furrow 5 cm wide and 2 cm deep. Sow sparsely and cover the seeds with a little fine soil (half a centimetre). Then lightly tamp down with the back of a rake. Germination takes about 8 days. Rows should be 40 cm apart. The young plants can then be thinned every 40 cm along the row, and they can also be transplanted elsewhere in the vegetable garden when they have 7 or 8 leaves.

Maintenance

To prevent diseases that attack chicories such as powdery mildew or rust, it is important to regularly hoe and weed and to practice a good crop rotation of 3 to 4 years. Watering should be generous and frequent. Ground cover (mulching) is beneficial.

Scarole chicories are less frost-resistant than wild chicories, so it is best to shelter them under a fleece or tunnel during winter.
